Blue Crab in Contemporary Thai Cooking
Blue crab has become one of the most exciting ingredients in contemporary Thai fine dining. Delicate, slightly sweet and beautifully versatile, blue crab works incredibly well within Thai cuisine because it complements spice, aromatics and richness without overpowering them.
Our restaurant is built around a philosophy of creativity, seasonal ingredients and harmony of flavour, which is why blue crab has become such a natural fit within our tasting menu.
You’ll find that contemporary Thai cooking is moving towards a more refined and ingredient-focused style of dining. Rather than masking ingredients with heavy seasoning, chefs are allowing local produce to shine more thoughtfully. Blue crab fits perfectly into this evolution.

Blue Crab in Thailand
Blue swimming crab, known in Thailand as pu ma, is one of the country’s most important seafood ingredients and has long been connected to coastal communities across both the Gulf of Thailand and the Andaman Sea.
Blue crab therefore represents an ingredient that feels deeply rooted in Thailand while still offering elegance and refinement within a tasting menu setting. It carries natural sweetness and salinity without feeling heavy, allowing richer curry-led dishes to remain balanced and expressive throughout the meal.
Blue crab also reflects the strong connection between Thai cuisine and the sea. Coastal provinces along the Gulf of Thailand, including areas known for their seafood traditions, have supplied restaurants and local markets with blue swimming crab for generations.
In recent years, sustainability and conservation efforts such as local “crab bank” initiatives have also become increasingly important in helping protect crab populations and support long-term harvesting practices within coastal communities.
Blue Crab At AdHoc Bangkok
One example from our current tasting menu is our interpretation of Golae Pu, built around blue crab sourced from the Gulf of Thailand to preserve freshness.
Paddle leg crab meat forms the centre of the dish. The chef slowly grills the crab to introduce a gentle smoky aroma while maintaining its sweetness and soft texture. Golae Pu sauce is then added to deepen the flavour and bring a savoury richness that complements the crab without overwhelming it.
The remaining parts of the crab are carefully transformed into a refined crab soup, served at the end of the meal. After a menu led by rich coconut curry flavours, the soup provides a lighter and more delicate finish designed to cleanse the palate and bring balance to the overall dining experience.
For us, this approach reflects a thoughtful use of the entire ingredient while allowing the natural flavour of the blue crab to remain at the forefront throughout the meal.
Blue Crab and Wine Pairing
Blue crab pairs well with lighter white wines as well as sparkling wine because of its delicate sweetness and soft texture. The acidity and freshness help cut through the richness of coconut curry while keeping the palate refreshed between bites.
This approach follows the same philosophy we use throughout our tasting menu: balance. The wine should elevate the dish rather than overpower it.
When approached thoughtfully, wine pairing becomes another layer of the overall dining experience.

Why Contemporary Thai Fine Dining Is Embracing Blue Crab
Modern Thai fine dining is increasingly focused on local sourcing, seasonality and ingredient quality. Diners today want to understand where ingredients come from and how they contribute to the story of a dish.
Blue crab fits beautifully within this direction because it reflects Thailand’s coastal food culture while also offering elegance and versatility within refined dining.
For restaurants like AdHoc Bangkok, using local ingredients is not just about freshness; although freshness certainly plays a huge role. It’s also about creating a dining experience that feels connected to Thailand itself.
The AdHoc Bangkok Experience
Dining at AdHoc Bangkok is designed to feel immersive and progressive. Our tasting menu changes with the seasons and evolves alongside the creative direction of our kitchen.
Each course builds on the last one, creating rhythm and balance across flavours, textures and aromatics. Ingredients like blue crab play an important role within this journey because they naturally bring delicacy, freshness and harmony to the table.
Whether paired with coconut curry, herbs or sparkling wine, blue crab allows us to create dishes that feel layered and refined without losing their connection to Thai cuisine.
